The superior cooked shoulder is prepared from pieces of defatted, de-nerved shoulder. It is salted and cooked. The product is presented in the form of a cut piece. The texture is soft but the meat fiber must be clearly visible.

Already cooked, this palette can be simply reheated. It is traditionally cooked with lentils or sauerkraut.
