A wild and isolated land, one-third of Alaska lies above the Arctic Circle. Wild fish live their natural life cycle in cold waters and feed on a natural marine diet. The quality of their meat reflects this. Fishing grounds are isolated from any other area of ​​human activity, and processing plants are never far away. Alaska's fisheries are managed to protect them from overfishing, habitat degradation and pollution, in part by limiting the number of fishermen to meet quotas. A ban on farming is also the law. From May to October, salmon leave the Pacific Ocean for their natal rivers when they are plump and strong. It is fished with a line, a seine net (encircled on the surface of the water with a fishing net), a gill net, etc. As for the Alaska pollock, it is fished from the end of January to the beginning of April and then from June to October with a pelagic trawl, a funnel-shaped net, without contact with the bottom and adapted to fishing in the open sea, most often by small fishing boats.

The most accessible of fish eggs, salmon eggs are characterized by a bright translucent orange color, a good size, and by their round shape which rolls on the tongue before bursting and releasing their fresh, iodized and delicate taste.

These Caspian Tradition salmon eggs, caught in Alaska, can be enjoyed on toast, blinis or sushi, salads or starters, combined with smoked salmon for example, on eggs, or as a finishing touch to seafood dishes.
