These Italian cheeses are remarkably fresh. They are produced using traditional methods, the spinning of which is still carried out by hand.
The buffalo milk (raw or pasteurized), selected according to the PDO rules, is worked there in a very short time in order to preserve its taste (geographic origin Caserta, Salerno, Lazio, Napoli and Foggia).
All mozzarellas are AOP certified. Using purely artisanal know-how, burratas di Buffala are made from a fine dough spun by hand to form a sort of pocket, garnished with creamy straciatella (the same dough shredded and mixed with cream). The bundles obtained are closed by hand and sealed in boiling water.
