These Italian cheeses are remarkably fresh. They are produced using traditional methods, including hand-spinning.
The raw buffalo milk, selected according to the rules of the PDO, is processed in a very short time in order to preserve its taste (geographic origin Caserta, Salerno, Lazio, Napoli and Foggia).
All mozzarellas are PDO certified. Using purely artisanal know-how, burratas di Buffala are made from a thin, hand-stretched dough that forms a sort of pocket, filled with a creamy straciatella (the same dough shredded and mixed with cream). The resulting bundles are then hand-sealed and sealed in boiling water.
