These Italian cheeses are remarkably fresh. They are produced using traditional methods, including hand-spinning.
The raw buffalo milk, selected according to the rules of the PDO, is processed in a very short time in order to preserve its taste (geographical origin Caserta, Salerno, Lazio, Napoli and Foggia).
All the mozzarellas are PDO certified. Using purely artisanal methods, the burratas di Buffala are made from a thin, hand-stretched pasta to form a pouch, filled with a creamy stracciatella (the same pasta, shredded and mixed with cream). The resulting bundles are then hand-sealed in boiling water.
