Mont d'Or AOP, seasonal cheese, its production begins on August 15 and ends on March 31.
Its very particular taste comes from its spruce hooping to hold it. It is regularly washed in salt water and turned over. It is only placed in the box with which it arrives on the cheesemaker's shelf at the end of its ripening.
The cheeses are matured in the cellars with daily care in order to delight your taste buds. The weight of all cheeses per piece can therefore vary depending on the maturation.
Practical information: Before tasting it, you must remove the top of its soft rind with the blade of a knife, following the edge of the cheese. Then serve it with a spoon. Or you can eat it hot (open the top, add a little white wine, preferably from the Jura, and put it in the oven for a few minutes)
