Mont d'Or, also called "Vacherin," owes its name to the highest peak in the Doubs. This seasonal mountain cheese is made at an altitude of over 700 meters, between August 15 and March 15, outside of grazing periods. Matured for at least 21 days on spruce boards, it develops an authentic flavor, enhanced by its spruce box whose pleated rind recalls the relief of its mountains of origin. Its creamy and melting paste is savored by the teaspoon, for a total weight of approximately 750 g with its wooden case.

This Mont d'Or embodies the essential pleasure of the cold months. Ideal on a cheese platter or to prepare the traditional "hot box": baked in the oven with a hint of white wine and garlic, it transforms into a warming and delicious dish, generally accompanied by potatoes and a salad. To enhance this moment, a white wine from Arbois is recommended.
