Mont d'Or AOP, seasonal cheese, its production begins on August 15 and ends on March 31.
Its very particular taste comes from its spruce strapping to hold it in place. It is regularly washed in salt water and turned over. It is only placed in the box with which it arrives on the cheesemaker's display at the end of its maturation.
The cheeses mature in the cellars with daily care to delight your taste buds. The weight of all piece cheeses may therefore vary depending on the maturation.
Practical information: Before eating it, remove the top of its soft-to-the-touch rind with the blade of a knife, following the edge of the cheese. Then serve it with a spoon. Or you can enjoy it hot (open the top, add a little white wine preferably from Jura and put it in the oven for a few minutes)
