Whole mace - 45g

Mace is the nutmeg flower, or the outer shell of the nutmeg. Its taste is similar but more refined, with a bitter note that pairs well with chocolate.

But Mace is more often used with fish such as pikeperch or perch, white meats or cooked fruits.

It also replaces nutmeg in gratins or purees.

To bring out all the flavors, it is usually crumbled over dishes during cooking or as a final touch.
