Whole mace - 60g

Macis is the nutmeg flower, or the shell of the nutmeg. Its taste is similar while being more refined, with a note of bitterness that goes very well with chocolate.

But Mace is used more with fish like Zander or Perch, white meats or cooked fruits.

It also replaces nutmeg in gratins or purees.

In order to extract all the flavors, it is generally crumbled on dishes during cooking or as a final touch.
