Señorío de Montanera, known for its acorn-fed Iberian hams, is part of a group of breeders respecting the rigorous requirements of the PDO "Dehesa de Extremadura" certification.
These hams, made from purebred "pata negra" pigs raised free-range in oak-dotted pastures, are among the most prestigious in the world. The lomo, or pork loin, comes from the tenderloin, the finest and leanest cut, with a light red color and slight marbling, free of external fat.
After careful salting, the meat is marinated for 48 hours in a mixture of spices and herbs, then inserted into a casing and gently smoked before a 120-day aging process.
