This Champagne cheese made from cow's milk is distinguished by its very fine grain, melting texture and its unique shape: a hollow at the top. In fact, unlike the vast majority of cheeses, it is never turned during ripening, so the moisture within its paste gradually migrates downwards, forming a hollow at the top of the cheese, called a "fountain".

The deeper it is, the more mature and creamy the cheese, and therefore the more pronounced its flavor. A very good indicator for choosing the cheese that suits you. The minimum maturation period required by the PDO is 15 to 21 days depending on the format.
