Langres Le Champenois AOP - 180g
This cow's milk Champagne cheese is distinguished by the very fine grain of its melting texture and its unique shape: a hollow hollow at its top. In fact, unlike the vast majority of cheeses, it is never turned over during ripening, so that the humidity within its paste gradually migrates downwards, thus forming at the top of the cheese a hollow, called “fountain”.
The deeper it is, the more refined and creamy the cheese is, and therefore pronounced in taste. A very good indicator for choosing the cheese that suits you. The minimum maturation provided for by the AOP is 15 to 21 days depending on the formats.
