An essential ingredient in the preparation of many dishes such as sauerkraut, cabbage soup, and salted pork with lentils, the shank is a very popular piece of pork. It is also called a ham because it is located under the ham.
The pork shank is a bony, gelatinous piece of pork meat that is located in the animal's legs. It is the piece of meat that surrounds the shin bone. There are two types: the foreshank and the hindshank. Since the foreshank is located below the pig's shoulders, it is much less meaty than the hindshank, which is located below the ham.
These pieces of pork are highly prized for the tenderness of the meat, its particular flavor and the juice that is released when cooked. The pork shank has the same nutritional benefits as other pieces of pork: rich in vitamins, proteins, and zinc, its lipid content is low with less than 10g per 100g of meat.
