The Black Pig of Bigorre is a native and purebred animal that has lived in the central Pyrenees for centuries. With its black coat and horizontal ears, it roams freely in its original territory, Bigorre, at the foot of the mountains, in a landscape of meadows and forests. Although considered too fat, slow and unproductive for intensive breeding and industrial standards, it has been brought back into fashion thanks to the hard work of the Paduan collective and its taste and the exceptional quality of its fat. Its meat is red, tender, juicy and intense, while its traditional method of drying in the open air benefits from a microclimate that gives it a particular flavor.
