The famous Bouzigues oyster, also called the Creuse de l'Etang de Thau oyster, is well known and appreciated by enthusiasts throughout France with its taste and beautiful shell.
Our Bouzigues oysters come from natural catchment (non-triploid) and raised using the traditional Thau basin method: they hang along a wire immersed in sea water for 1 to 1.5 years .
They benefit from water extremely rich in plankton and therefore have a high percentage of flesh while being firm. They have a very iodized taste while being full of flavor. Our oyster farmer then refines them in a pond to remove some of the salinity. Fans will appreciate their fleshy, crunchy side. After tasting it, they may find oysters from other French basins very “bland”.
