This climbing bean is produced in the Tarbes region of Bigorre. Cultivated as it was in the past, it is left to dry naturally on the plant and is still harvested by hand.
Thanks to its thin skin, cooking is accelerated and water absorption is improved. The grains, firm and whole, swell well without bursting and are surprisingly light. Their skin blends with the flesh in a delicious creaminess. These exceptional beans can be eaten in summer as well as in winter, as a starter, salad or main course, according to your inspiration. Soak them overnight in 2.5 times their volume of cold water (which doubles their volume). Bring to a boil in freshly renewed water then cook over low heat for about an hour. Add salt halfway through cooking.
