A typical Alsatian specialty prepared traditionally. The gendarme is a type of smoked sausage made from beef fat and pork fat, with very firm flesh and a skin that is crispy under the tooth, traditionally produced in southern Germany, Austria, Lorraine, Switzerland and Alsace.
Salty, spicy, then smoked after drying, its characteristic taste comes from ground caraway which gives an aniseed note.
Sold in packs of 10 pairs, or approximately 1.1 kg.
All our fresh products are sent in specially designed insulated packages including cooling gels to keep them cool throughout the journey.
