Randy is a company from the Lyon region, bringing together specialists in the production of charcuterie and pastries, fine connoisseurs of Lyon products. Randy has his workshop for the production of pure butter brioche and puff pastry, made from French flour. Their pure butter brioche dough is kneaded then left to rest to aerate and develop. Lyon's cooking sausages are made with controlled meats and delivered every day. The stuffing is made according to a mince respecting the code of practice of charcuterie. The sausages are stuffed into a natural casing closed with a string, then slowly steamed to color and reveal all the aromas of the meats. Particular care is given to this steaming time in order to develop all the flavors of the cooking sausages. The stuffings and fillings of the other recipes are all homemade. Randy has joined the Martinet group.
