From the Latin "hay", fennel is a plant native to the Mediterranean basin where it can, even today, be found in the wild along the roads or the sea.
Steamed for ten minutes, it is an ideal garnish for fish and meats such as veal and lamb. It also goes very well with carrots, celery and onions. It can also be prepared as a gratin or mixed to make a tasty soup.
Don't hesitate to add garlic, they go well together. Fennel is also prepared braised, in butter, with a little sugar which gently caramelizes it. You can slip it into papillotes (put under salmon or sea bass) or stew it with tomatoes and olive oil.
