Prepared in an excellent natural court-bouillon, these shelled snails (Helix Pomatia) are ready to use, without rinsing. They can be used to garnish shells, in gratin, in casseroles or even on skewers.
Their delicate-tasting flesh can be used in all recipes. Their extra flavor comes from the use of a 100% natural broth by infusing a bag of bay leaves, thyme, bird's eye pepper and cloves in salted water.
Your snails will have been bathed in a fragrant broth.
You therefore do not need to rinse your snails and you can use the broth, for example to make your sauce bases.
