The Causses du Quercy regional park is the domain of the “Caussenarde du Lot” sheep breed, adapted to the meager vegetation of these vast limestone expanses.
It can be recognized by the black circular spots that look like glasses.
This quality lamb, IGP, is the first meat to have obtained the Label Rouge. Raised under the mother for a minimum of 70 days, its diet is supplemented with cereals and plant foods. The youngest animals (150 days maximum) will obtain the Label Rouge.
Its light meat is tasty, fine and tender, to roast in the oven or on a spit.
