Far from mass consumption, the Axuria Pyrenees milk-fed lamb has an exceptional taste quality and occupies a privileged high-end position. This rare and authentic milk-fed lamb is produced in limited quantities in the mountains of the Basque Country, more precisely in the Soule Valley. It is available from November to July. Its flesh is lean and tender, white in color, its taste is suave, extremely fine and much less pronounced than that of older lambs. It can be grilled, roasted or braised.
