Curé Nantais is a soft (washed) cheese from Nantes, made from raw cow's milk. Matured for 4 to 8 weeks in a cellar, this dairy product will have a rind washed with salt water or muscadet, giving it a richer taste and its characteristic flavor.
The rind of Curé Nantais is relatively thin, allowing the Nantais cheese to release an aroma of smoked bacon, and when tasted, it will reveal a more fragrant, even spicy flavor. Prolonged ripening on cheeses like this can certainly strengthen the aromas produced by this dairy product.
For the more curious, you will notice that the rind of this cheese is orange, smooth and slightly shiny, hiding a perfectly soft paste underneath.
