This couscous comes from the Bizerte region, between the mountains and the sea, at the tip of Africa.
Thanks to less variable rainfall this region has been growing cereals for centuries.

The durum wheat semolina is slightly moistened and rolled by hand, then passed through a fine sieve, moistened again, rolled and mixed with semolette. Sifted again, the grains are steamed then left to dry slowly in the sun...
These free grains do not stick and this homemade semolina has a pronounced wheat taste.
To cook with vegetables (zucchini, carrots, pumpkin), legumes (beans, chickpeas) and meats for a balanced meal. Nutritionally, couscous is lower in calories than bread and rich in selenium, a powerful antioxidant. Steam cooking is recommended, as in traditional Tunisian couscoussiers.
