By going through a dry salting rich in 6 spices, and by a smoking with perfumed beech sawdust, this heart of smoked salmon fillet is an exceptional piece.
Once properly removed from the dorsal muscle of the salmon, all the expertise of the Borvo house is put to use.

For 30 years, the family business Le Borvo has been the gastronomic reference in salmon smoking, founded by a chef awarded a Michelin star. The salmon (Salmor salar) from Norway, Scotland or Ireland are scrupulously selected. The salting with salt enriched with six spices must be subtle to preserve all of the delicacy of the fish. Similarly, cold smoking with beech sawdust enriches the fish with discreet notes. Matured then sliced by hand, Le Borvo smoked salmon are always a guarantee of quality.
