Dry salted with 6 spices and smoked with fragrant beech sawdust, this heart of smoked salmon fillet is an exceptional piece.
Once taken as required from the salmon's dorsal muscle, all the know-how of the Borvo house is put into practice.

For 30 years, the family company Borvo has been the gastronomic reference in salmon smoking, founded by a chef awarded a Michelin star. Salmon (Salmor salar) from Norway, Scotland or Ireland are scrupulously selected. Salting with salt enriched with six spices must be subtle to preserve all the delicacy of the fish. Likewise, cold smoking with beech sawdust enriches the fish with discreet notes. Refined then sliced by hand, Borvo smoked salmon is always a guarantee of quality.
