Japanese shimeji mushrooms are Asian vegetables very common in Southeast Asian cuisine. Shimeji are recognized by their long stems, topped with small white or brown caps. In the wild, Japanese shimeji mushrooms grow in clusters on the bark of beech trees. The Japanese shimeji mushroom is quite difficult to cultivate, hence its value in cooking.
The cap and the stem are edible. Shimeji is a small mushroom, so it can be eaten whole, just cut off the base, there is no need to cut it into slices. So it looks very pretty on the plate! It is not eaten raw. It is cooked like other mushrooms, in a pan in a little butter.
Shimeji keeps extremely well because it is picked with its stem. The mushroom continues its life in its bag, in the vegetable drawer of your fridge! You can easily keep it like this for ten days.
