Impertinent is what we call fresh caviar, i.e. young caviar, matured between 2 weeks and 2 months for sweet creamy, buttery, smooth notes and a delicate nutty flavor. It comes from the Siberian sturgeon species (Acipenser Baerii). Its pretty color with golden highlights ranges from blond to pearl gray.
