The first company to have attempted the adventure of producing French caviar, Caviar de France now controls all of its production stages, from the birth of the fry to their breeding in ideal water, with natural food, and without antibiotic treatment, to the extraction and maturation of the caviar.
In the heart of the Arcachon Bay, its Acipenser Baeri sturgeons are raised in pure water pools fed by a natural river in an open cycle, in a sustainable and responsible manner. This species produces caviar similar to Sevruga, with a hint of Oscietra flavor.
Ebony expresses an intense taste and exceptional persistence. Iodized but not very salty, it brings notes of oyster, sea urchin, and green hazelnut.
Ideally, enjoy it in its simplest form (in the original box on a bed of ice), with a spoon (horn, porcelain, or mother-of-pearl), on a bed of crushed ice. It is at the second spoonful that your taste buds will have opened up and you will fully appreciate the flavors of butter, hazelnut, or oyster...
If you want to accompany it, serve it with warm ratte, mashed potatoes, cauliflower cream or a soft-boiled egg.
The perfect pairing: a brut blanc de blancs champagne, made from Chardonnay grapes, or a dry white wine, made from Sauvignon grapes.
