The first company to attempt the adventure of producing French caviar, Caviar de France now controls all of its production stages, from the birth of the fry to their rearing in ideal water, with natural food, and without antibiotic treatment, to the extraction and maturation of the caviar.
In the heart of the Arcachon Basin, its Acipenser Baeri sturgeon are raised in pure water ponds fed by a natural, open-cycle river, using sustainable and responsible methods. This species produces caviar similar to Sevruga, with a hint of Osetra in flavor.
Ebony expresses an intense flavor intensity and exceptional persistence. Iodine-like but not very salty, it offers notes of oyster, sea urchin, and green hazelnut.
Ideally, enjoy it in its simplest form (in its original box on a bed of ice), with a spoon (whether a horn, porcelain, or mother-of-pearl spoon), over crushed ice. It's with the second spoonful that your taste buds will awaken and you'll fully appreciate the flavors of butter, hazelnut, or oyster…
If you wish to accompany it, serve it with a warm ratte potato, mashed potatoes, cauliflower cream or a soft-boiled egg.
The perfect pairing: a brut champagne blanc de blancs, made from chardonnay grapes, or a dry white wine made from sauvignon grapes.
