Fleur du Maquis is an aromatic Corsican sheep's milk cheese called "brin d'amour", hand-made from the animal's raw milk and sourced from the Bastia region. With a soft paste and a natural rind, it is matured to perfection over a period of 1 to 3 months.
As mentioned earlier, Fleur du Maquis has a rind coated with regional herbs, including juniper berries and small bird's eye chilies. It is a cheese that offers a bold and powerful flavor unique to others.
For a touch of originality at the aperitif, try cutting the Fleur du Maquis into thin slices to enjoy as is. This Corsican sheep's cheese, infused with aromatic herbs, is also a delicious addition to a cheese platter for an after-meal, accompanied by country bread.
And while a crisp white wine made from the Vermentino grape from Comte Peraldi d’Ajaccio pairs perfectly with this herb-infused Corsican cheese, I once heard about an assortment of Greek retsinas. So I tried an organic retsina from the Kamara estate and the harmony was exquisite. Otherwise, white wines from Languedoc also make lovely pairings. If you prefer red, opt for a spicy wine from Roussillon.
