Brillat-Savarin benefits from the addition of cream at the beginning of its production, almost twice that of classic cheeses. Its melting texture and mildness make it a pleasure to enjoy chilled.

Primarily enjoyed from April to October, it remains a refined choice for all occasions. Formerly known as Excelsior until 1930, this cheese was renamed in homage to the famous gastronome and magistrate Jean Anthelme Brillat-Savarin by a Parisian cheesemonger.
