Brillat-Savarin is a delicately melting triple-cream cheese, best enjoyed young and chilled. Made in Normandy and Burgundy from raw or pasteurized milk, it contains at least 40% fat. Classified as a soft cheese with a bloomy rind, its rind, ranging from white to ivory, is covered with a fine, soft, and silky white down.
