A traditional charcuterie that young and old alike appreciate for its taste which goes wonderfully with apple... potatoes of course, but also apple fruit.
Our Charcutiers start by slowly browning fresh onions in a pot. Spices and pork fat are added at the end of cooking. It is this mixture which will give all its flavor to the pudding.
The blood is integrated into this mixture which will then be pushed into a natural casing.
Once formed, the sausages go through two successive and complementary cooking stages: cooking in broth then steam cooking.
