A traditional charcuterie that young and old alike appreciate for its taste which goes wonderfully with apples... potatoes of course, but also fruit apples.
Our butchers start by slowly browning fresh onions in a pot. At the end of cooking, spices and pork fat are added. It is this mixture that will give the black pudding its flavor.
The blood is incorporated into this mixture which will then be pushed into a natural casing.
Once the black puddings are made, they go through two successive and complementary cooking stages: cooking in broth and then steaming.
