The Black Pig of Bigorre is the native purebred pig, present in the central Pyrenees since time immemorial. Recognizable by its black coat and horizontal ears, it lives in freedom in its territory of origin, Bigorre, on the borders of the Hautes-Pyrénées, Gers and Haute-Garonne, at the foot of the mountains, in a landscape of meadows and undergrowth. Its exceptional meat is red, tender, juicy and intense.
Traditionally in Bigorre, the preservation of hams by drying in the open air benefits from a microclimate alternating between humid and dry phases, which gives them their very particular character.
