The Black Pig of Bigorre is the purebred indigenous pig, present in the central Pyrenees since time immemorial. Recognizable by its black coat and horizontal ears, it lives freely in its original territory, Bigorre, on the borders of the Hautes‑Pyrénées, Gers and Haute‑Garonne, at the foot of the mountains, in a landscape of meadows and undergrowth. Too fat, too slow, too unproductive, unsuitable for intensive breeding and industrial standards, he had become an archaic, useless animal. Bigorre black pork is reborn today thanks to the hard work of the Padouen collective and thanks to the exceptional taste qualities of this same fat! It actually produces a very good quality fat, due to a significant quantity of oleic and linoleic fatty acids. These good fats have many physiological benefits: anti-cholesterol, preventing cardiovascular diseases, active in the immune system. In order not to distort its original qualities, breeders make no concessions on its breeding conditions. Its exceptional meat is red, tender, juicy and intense. Traditional in Bigorre, the conservation of hams by drying in the open air benefits from a microclimate alternating between humid and dry phases, which gives them their very particular character.
