Tourage butter has a firm, dry, and plastic texture. It has a lower water content, with a humidity level of 14%, and a higher fat percentage than conventional butter (84% versus 82%). This is why it is also called dry butter.

Made from thick cow's milk cream, this dairy product is an essential ingredient in French pastries. It comes in slabs or rectangles.

In fact, Tourage butter is used to prepare two types of puff pastry:

  • Puff pastries made with flour, water, salt and butter, with the exception of Viennese pastries.
  • Puff pastry for making pastries made from flour, water, salt, butter, yeast and resting in a proofing chamber.

Sometimes it is also called pastry butter.

The Isigny-Sainte-Mère Cooperative operates within a 35 km collection area in the Cotentin and the Bassin region around Isigny-sur-Mer. This opulent grassland is a veritable "fountain of butter and cream" thanks to its rich and fertile soils (alluvium, 170 days of rain per year, ideally distributed, mild summer temperatures, and mild winters). The result is milk rich in mineral salts, trace elements, and oleic fatty acids. The dairy is owned by the producers and processes the collected milk within 48 hours using traditional methods.
