Andouille au lard is still made by hand by the andouillerie de Fouesnant (between Bénodet and Concarneau), from fresh French pork, and traditionally smoked over beech wood.

While the Guéméné andouille is widely acclaimed by andouille lovers, the andouille au lard, with its smoked pork belly heart, and the pork belly enveloping an andouille heart, offer a milder flavor.
