This aligot is prepared with fresh Bintje potatoes, incorporating a smooth cream made from skimmed whey, and fresh Tome cheese from Aubrac made with whole raw milk. Its exceptional delicacy comes from the rigorous use of fresh Tome cheese from Aubrac, produced according to strict specifications guaranteeing impeccable quality.

To prepare it, pour the contents of the container into a saucepan and heat over medium heat, stirring gently with a spatula for a few minutes. Stretch the aligot several times to achieve its characteristic texture. You can enhance its flavor with pepper, garlic, nutmeg, meat juices, or bacon bits, according to your preferences. This Aubrac specialty pairs elegantly with roast meats, red meats, grilled meats, or sausages.

Originating from the Aubrac region, Aligot is a traditional dish that was once the main meal offered by the monks of Aubrac to pilgrims on their way to Santiago de Compostela. Initially made with breadcrumbs, it was replaced in the 19th century by potatoes, thus giving rise to the modern recipe we know today.
