This refined pasta comes from the Alba region of Piedmont, made from carefully selected durum wheat semolina and fresh eggs, slowly kneaded at a constant temperature. Stretched in a rolling mill, the dough rests before being dried at a precise temperature of 42 to 47°C to ensure a consistent texture and excellent cooking performance. After a second resting period, it is shaped and cut every 12 hours, then measured and packaged by hand. Available in traditional shapes, it cooks in just 3 minutes. The high standards of raw materials and meticulous control at every stage give this product exceptional status.
