A trout raised in the Pyrenees, upstream of the Nive in the Aldudes valley. As with salmon, this fish is exceptional, benefiting from high quality waters.
The Angresse Artisanale workshop works with salmon from the waters of the Orkney and Shetland Islands in Scotland and also from a farm in western Ireland with a particularly low density.
To enhance these salmon, its teams have created a specific smoking and maturation technique, combining distant traditions with perfection. It rigorously selects the fish and ingredients (Guérande salt and beech wood), works by hand and without freezing, smoking and maturing according to an exclusive recipe, giving the fish time to reveal all its flavors.
