Each fillet is prepared with the utmost care, dry-salted, washed, and then cold-smoked over beechwood for an average of 8 hours. Our expert artisans then age the fish for approximately a day, taking into account its size, moisture content, and fat content.
Finally, the fillets are hand-sliced by experienced professionals, without being stiffened. Thanks to our strict packaging and shipping processes, you can be assured of the freshest and most traceable product.
